SAUSAGE CORNBREAD
Ingredients:
1 pound sausage ¼ cup cooking oil
1 large onion-chopped finely ¾ cup milk
1 ½ cups corn meal 2 eggs
1 17oz. can cream style corn 2 cups grated cheddar cheese
Heat oven to 425 degrees.
1) Brown sausage and drain well. Add onions and sautee until onions turn clear.
Set aside.
2) Combine eggs, oil, milk, and corn. Mix well. Add corn meal & mix well again.
3) Put 3 or 4 tablespoons of oil and butter in large pan (iron skillet is best). Heat
until hot and sprinkle with meal to keep bread from sticking.
4) Pour half of meal mixture into skillet. Spread sausage/onion mixture on top
and sprinkle cheese over this. Pour remaining meal mixture over top and bake
for 30 to 40 minutes.
